Our favorite holiday side dish (and a great pot-luck quickie) is my mom’s Corn Casserole

3 cans white corn or white/golden mix corn (drained)
1 can of chopped green chilies (undrained)
1 8oz block of cream cheese
    1 stick of butter

Melt the butter and cream cheese together in a sauce pan. When creamy, add the green chilies (juice and all). When that is mixed together good, add the cans of drained corn and stir. Let simmer for a few minutes to cook the flavor of the chiles into the rest of the dish.

This adds a bit of spice to the table but sadly, there are never any leftovers.

    Enjoy!
